Chocolate Chia Pudding & Berry Medley

It's the day before Valentines Day and I'm elbow deep in cake orders and editorial. Kevin and I do not in any way make a massive deal of Valentines day, but we still make an effort to book ourselves in for a nice dinner and always trade chocolate and hand written cards. So apart from at least making an effort to look half decent for our date night, I've been pondering ways to make our day that tiny bit sweeter. This year, we're on a little bit of a health kick. So I decided to prepare something delicious that's still a practical 'breakfast in bed' (that does not involve actually cooking the morning of). This vegan and gluten free recipe is one I whipped up in next to no time and is just the ticket for those of us who are time poor and might benefit from a breakfast prepared the night before. Perfect for all you single go-getters too. Spoil yourselves!

Chocolate Chia Pudding & Berry Medley

You will need: 1 and a half cups of Almond Breeze Chocolate Almond Milk 1/3 Cup of chia seeds 1 heaped cup of chopped fresh strawberries, blueberries and pomegranate 2x 250ml glass jars or small bowls

In a small bowl, combine the Almond Breeze Chocolate Almond MilkΒ and the chia seeds. Briskly mix with a fork until combined and let rest in the refrigerator for approx. 15 mins.

While the pudding mix rests, wash, chop and prep 1 heaped cup of berries.

Once the Pudding mix has thickened (will only take approx 20 mins) split the mix evenly between the two jars, and top with the berry medley. Seal the jars (or cover bowls) and let chill in the refrigerator over night.
